Did the Romans really put lead in their wine? Fact check

The question of whether the Romans actually mixed lead into their wine has fascinated people for centuries. The short answer: yes, lead-containing additives regularly found their way into Roman drinks. But the story behind it is far more complex than the popular myth would suggest.

In popular science books and documentaries, lead is regularly portrayed as the empire’s secret poison – an invisible enemy said to have driven emperors and senators alike to madness and shortened lives from generation to generation.

But did the Romans really mix lead into their wine? This fact-check brings together historical sources, archaeochemical analyses and modern medical findings. It reveals that the truth lies neither in pure myth nor in a simplistic headline.

How did the Romans generally use lead?

The metal ‘plumbum’ was a common everyday material in the Roman Empire. Lead was cost-effective and readily available, prized for its malleability and low melting point. It permeated almost every aspect of daily life:

  • Water pipes: The Romans used lead pipes for the water supply in cities such as Rome and Pompeii. Lead in water pipes caused continuous, mostly unnoticed poisoning.
  • Cookware and household utensils: Pots, pans and drinking vessels were made of lead or lined with lead.
  • Cosmetics: Lead white (‘cerussa’) was used as a face powder.
  • Everyday objects: Lead was also used for weights, writing tablets and other household items.

Major lead deposits were found in Hispania (Sierra Morena), Britannia and Gaul, where lead was often a by-product of silver mining. Through trade and mining, the material spread throughout the entire empire.

How did lead end up in Roman wine? (Lead sugar & Co.)

It was only a small step from general use to its application in winemaking. The Romans used lead vessels to boil down grape syrup – and this is precisely where the problem arose.

The chemical reaction between acetic acid in the must and lead produces lead acetate, also known as ‘lead sugar’. This salt has a pleasantly sweet taste and was a welcome substitute for expensive honey. Lead sugar was used as a sweetener in wine, without most people at the time realising the danger.

The Romans were familiar with various grape must syrups that played a central role in wine production:

  • Sapa: must, reduced to about a third of its original volume
  • Defrutum: must, reduced to between half and two-thirds
  • Caroenum: a less heavily reduced variant

These syrups were often prepared in pots containing lead or lined with lead. The acid in the must dissolved lead compounds from the vessel, forming that sweetish lead sugar. The Romans did not use lead as an ‘open poison’, but as a practical additive to improve flavour, shelf life and acidity balance – something that they simply found tasted better.

Ancient recipes recommended these syrups, flavoured with herbs and spices, to refine the must into a complex drink. It was not a vice, but common practice.

What do historical sources say about lead-laced wine?

Roman authors rarely wrote explicitly, ‘Add lead to the wine.’ Instead, they described preparation steps from which the formation of lead sugar can be clearly deduced.

Key sources include:

  • Cato the Elder (2nd century BC) recommends boiled-down must as a preservative in his wine-making recipes.
  • Columella (1st century AD) explicitly writes that sapa should be prepared in lead vessels rather than copper ones to avoid bitterness – a method that followed the logic of the time.
  • Pliny the Elder (23–79 AD) occasionally notes that sapa is harmful under certain circumstances – for example, for those who are fasting.

Vitruvius had already advised against using water from lead pipes, as this was ‘not healthy’. Ancient physicians such as Dioscorides and Galen certainly described lead as harmful in certain applications, but did not understand the long-term effects of low doses. There was simply no concept of chronic lead exposure as science understands it today.

Archaeochemical evidence: just how much lead was really in the wine?

Modern science can now detect traces of lead in Roman amphorae, tooth and bone remains, and wine stones. The results are striking.

In the 1980s, toxicologist Jerome Eisinger experimentally replicated Columella’s recipe: if must is reduced to a third of its volume in a lead vessel, this results in lead concentrations of roughly 1,000 mg per litre of syrup. If this syrup is mixed in the ratio recommended by Columella – one sextarius defrutum to one amphora of wine – this results in a lead concentration of around 20 mg per litre of wine. If, instead, one were to follow Cato’s significantly more concentrated ratio of 1 to 30, the figure would presumably have been even higher.

The key findings of bioarchaeological research:

  • Bones from Londinium (Roman London): A study led by environmental scientist Sean Scott found a median value of 26.5 µg of lead per gram of bone in Romans (range 8–123 µg/g), compared with less than 0.5 µg/g in pre-Roman Iron Age populations – more than 70 times higher.
  • Portus near Rome: Average levels of around 10 µg/g in the bones of the middle class – significantly above pre-industrial background levels.
  • Tooth enamel in children: levels ranging from 0.03 to 187 µg/g, with the most extreme values indicating massive lead exposure as early as infancy.

Important: Not all Roman wine was equally contaminated. Lead levels varied considerably depending on the region, type of vessel and method of production.

Health consequences: Lead poisoning in ancient Rome

Lead poisoning – historically also known as saturnism, named after the planet Saturn, to which alchemists attributed the metal – manifests in two forms: acute poisoning from high single doses and chronic, insidious exposure of the body through the intake of small amounts over many years. Lead accumulates in the body and can cause long-term damage.

Typical symptoms of chronic lead poisoning include:

  • Fatigue and headaches
  • Abdominal pain (“colica saturnina”)
  • Anaemia and kidney damage
  • Neurological disorders and neuropathies
  • Fertility problems
  • Cognitive impairment

The Roman upper classes were particularly affected by lead poisoning. They drank more wine, used lead-glazed pottery when eating and had greater access to lead-based cosmetic products. Although ordinary rural dwellers, soldiers and slaves also consumed contaminated water, they were less frequently exposed to the concentrated syrups used in elite cuisine. Chronic exposure to lead may have impaired cognitive abilities – an effect that is likely to have been particularly severe in children, as their growing bodies absorb lead more readily.

Modern parallels highlight the relevance of this issue: as late as the 19th and 20th centuries, alcohol consumers, painters and musicians in Europe suffered from lead poisoning caused by contaminated materials, paints and air in workshops.

Did lead in wine contribute to the fall of Rome?

The idea that lead might have played a part in the decline of Rome was first proposed as early as 1965 by the sociologist Seabury Colum Gilfillan. In the 1980s, the geochemist Jerome Nriagu took up this theory in his book *Lead and Lead Poisoning in Antiquity* (1983) and reinforced it in a widely acclaimed article in the *New England Journal of Medicine*: Chronic exposure to lead is said to have reduced the Romans’ mental capacity, caused illness, diminished fertility and weakened the political elite across generations.

Nriagu’s book, however, met with sharp academic criticism. The classical scholar John Scarborough criticised the work for containing so many inaccuracies, misquotations and methodological flaws that its central arguments could not be trusted. The physician and archaeologist Tony Waldron also criticised the uncritical treatment of sources and emphasised that the fall of the Roman Empire was a highly complex phenomenon that could not be reduced to a single cause.

Arguments suggesting that lead played a certain role:

  • Proven high levels of lead in the bones of Roman elites
  • Possible effects on cognitive abilities and judgement among decision-makers
  • Increased incidence of gout and fertility problems as a possible sign of chronic poisoning

  • Nriagus’s specific line of argument is considered by specialist historians to be highly open to methodological criticism.

A ‘fact-check’-style verdict: lead in wine is well documented historically and relevant to health; the bioarchaeological findings regarding elevated lead exposure are beyond question – yet, amongst experts, the theory is regarded as outdated and overly simplistic as the sole explanation for the fall of Rome.

Today’s approach to lead in food and wine

Compared with antiquity, lead is now thoroughly researched and strictly regulated as a toxin. Modern wines are subject to regular checks. In the EU, Regulation (EC) No 1881/2006 sets a maximum limit of 0.20 mg of lead per litre of wine, whilst the International Organisation of Vine and Wine (OIV) recommends an even stricter limit of 0.15 mg/L. Compared with the estimated 20 mg/L in lead-sweetened Roman wine, today’s limit is therefore around a hundred times lower.

Lead pipes in drinking water systems have been replaced or decommissioned in many European countries. Anyone buying wine today need not fear any lead-related health risks, as was the case in ancient Rome, provided that the applicable limits are adhered to.

Were all Romans aware that lead is a poison?

No, there was no widespread awareness of this. Although some contemporaries, such as Vitruvius and Nicander, observed that certain lead compounds were harmful to health, the modern concept of chronic lead poisoning did not exist. Ancient medicine even used lead in small doses as a remedy in some cases and distinguished between ‘correct’ and ‘incorrect’ use. The insidious effect of persistently elevated lead levels in wine simply could not be recognised – the danger of the poison lay precisely in its invisibility.

Were there any other problematic additives in Roman wine?

As well as lead, the Romans used resins, herbal extracts and sometimes seawater for stabilisation and flavouring. Not all additives were toxic – resin, for example, poses no health risk. However, certain metals leaching from vessels or high doses of herbal additives could also pose risks. In a toxicological comparison, however, lead and its compounds were by far the most problematic element among the wine and fruit additives of antiquity.

How reliable are the measurements of lead in Roman bones and vessels?

Modern methods such as mass spectrometry are extremely sensitive and can detect even the smallest amounts of lead. Research teams must take into account the effects of ageing and possible contamination from the soil, which leads to a certain degree of uncertainty. Despite this variation, the trend is clear: lead exposure was significantly higher in certain groups within the Roman Empire – a finding confirmed by numerous independent studies conducted over decades.
